What makes school cake the best?

For those who do not know what a school cake is, it is a simple vanilla sponge cake, topped with water icing and sprinkles. It is a popular pudding served in schools up and down the UK.

The sponge is a simple recipe of self raising flour, caster sugar, butter, eggs and vanilla extract.  It can easily be adapted to suit your taste too by making it a chocolate or coconut cake.

Using boiling water and icing sugar, you make a simple but tasty icing. The key is consistency as you don't want it to be too running or too thick.

Sprinkles

As if you didn't have enough sugar in the cake, once the icing is on, you need to cover it in sprinkles!  The more the merrier I say!
