The Best Vegetable Soup Recipe – Healthy & Easy
It is officially soup season and this vegetable soup recipe is going to be perfect for everyone, as it is so versatile!
Whether you are looking for something for lunch or maybe a lighter dinner, this recipe packs full of flavour, is simple and is perfect for using up leftover vegetables that are in the fridge.
Soups don’t need to be boring and the great thing about them is, that once you have your core ingredients, you can add other ingredients based on your taste preference, which is perfect when you have fussy children!
This soup was made in our Morphy Richards soup maker, so the timing for yours may be a little different, I will also share how to make it on the hob a little later in the post. If you have the Ninja soup maker, I would love to know what you think of it. Our Morphy Richards is a little old now and is on its way out, but I always like to do a little research before making my next purchase!

Easy vegetable soup recipe
Prep time – 10 Minutes
Cook time – 22 Minutes (may be quicker if you have a different soup maker)
Wait time – Allow to cool for a few minutes before serving
Ingredients
- 2 Medium potatoes
- 3 Carrots
- 1 Celery stick
- 1 Onion
- 1 Swede
- 1 Vegetable stock cube
- Cold water
- Salt & pepper
Instructions
- Peel and roughly chop all the vegetables.
- Add them all into the soup maker and fill with cold water until it reaches the max line.
- Add in your vegetable stock cube & season.
- Pop your soup maker on smooth setting and wait for it to cook.
- Serve and enjoy with crusty bread or perfect on its own.

We always enjoy our vegetable soup with crusty bread however you could serve it however you like, I know lots of people enjoy theirs with toast, toasties or even just as it is. If you are looking for a little health kick for the new year or just looking to reduce the amount of bread you consume, it is filling on its own and you won’t feel as though you are missing out.
As I mentioned a little while ago, this can be made without the soup maker, so there is no need to invest in one if you don’t currently have one.
How to make soup without a soup maker
There are a number of ways to make soup using either a crock pot, pressure cooker or back to basics, a large pot over medium-high heat! All of these options will require you to have a hand blender, immersion blender or stand blender if you want a smooth soup but they all work just as well.
Just make sure you bring your soup up to temperature and cook all your veggies until soft, then blend and enjoy!

What vegetables can you put in vegetable soup?
As long as you start with potatoes as it is a great way to help thicken the soup, I am pretty open to using any fresh vegetables you may have, even if they are going past their best. Here are some of my favourite suggestions to add to soups throughout the year.
Potatoes – I personally prefer to use white potatoes such as maris piper or russet potatoes however sweet potatoes can work just as well.
Beans – Green beans if you are after fresh vegetables but also white beans work well in soups.
Root vegetables – Everything from carrots to parsnips, turnip and swede. All work well in soups and bring bags of flavour at the same time.
Don’t forget you can also adapt the flavour of your soup by the stock you use too, I choose to use vegetable stock but if you prefer to you could use a vegetable broth or even chicken broth if you want a different flavour.
Herbs and spices can also have a big part in your soup recipe, you can add things such as Italian seasoning or maybe even some red pepper chilli flakes to add another level to your hearty soup. Pick flavours you enjoy and add to the dish you are creating.
