Delicious One-Pot Chicken And Chorizo Orzo

This one-pot chicken and chorizo orzo dish came from a mistake on my part and yet it is delicious! We had some chicken that needed to be used up and also some chorizo that was due to go out of date soon, so I thought I would make us a delicious risotto, it was only after getting everything out that I realised I was missing the main ingredient, risotto rice!

However, We did have a pack of orzo, which I had never cooked before, so why not try?

This dish is so easy, it is perfect for that midweek meal after a busy day at work and to be fair, it can be made using pretty much any veggie or meat you have in the fridge.

One-Pot Chicken And Chorizo Orzo recipe

Ingredients –

  • 400g Chicken breasts in bite-size pieces (You could use boneless chicken thighs if you prefer)
  • 150g Spanish chorizo sliced
  • 250g Orzo
  • 1 Red onion diced
  • 150g Cherry tomatoes/Chopped tomatoes
  • 1 Green pepper chopped into small chunks
  • 1 Yellow pepper chopped into small chunks
  • 1 Roasted pepper (from a jar) chopped into small chunks
  • 2 Cloves of crushed garlic
  • 2 Tsp Chipotle paste
  • 1 Tsp Smoked Paprika
  • 1 Tsp Cayenne Pepper
  • 500ml Vegetable stock (you could use chicken broth or chicken stock if you prefer)

Method –

  • Heat a deep pan or casserole dish with a little oil on the hob.
  • Fry the onions until soft and then add in the chorizo and chicken, and fry for 4-5 minutes.
  • Add in the peppers, tomatoes, garlic and all the spices. Stir for a few minutes.
  • Add in the orzo and give a good mix until all are combined.
  • Stir in the vegetable stock and give a good mix.
  • Allow to cook on a gentle simmer and low heat until the sauce thickens and the orzo is al dente, this will be about 10 minutes.
  • Enjoy!

Depending on how it is cooked, you may find that it will need a little splash of water.

Do you need to rinse orzo before cooking?

No, orzo doesn’t need to be rinsed before cooking, just like any other pasta shape.

This is already a delicious recipe but if you wanted to you could add additional ingredients to this dish such as parmesan cheese or sun-dried tomatoes if you want to give the dish a little bit more luxury.
