This delicious recipe is the perfect chicken chipotle melt taco bell recipe that doesn’t take too long to make at home. Many of the ingredients you are likely to have in your cupboard or fridge, which makes this even better.

I cooked all of this in my air fryer, however, if you don’t have one of those, you can cook it in the oven and it will be just as tasty.

Chicken chipotle melt Taco Bell recipe
Ingredients
Marinade
- 1 Tbs chilli powder
- 1 Tsp Ground cumin
- 1 Tsp Ground coriander
- 2 Garlic cloves (crushed)
- 1 Tbs Worcestershire sauce
- 2 Tbs Apple cider vinegar
- 1 Tbs Olive oil
- 1 Tbs Chipotle paste
- Juice of 1 lime (about 1 cup of lime juice)
- Salt and Pepper
Melt
- 2 Chicken breasts (cut into small pieces)
- 4 Flour tortillas
- 100g Cheddar cheese
Instructions
- Mix together all the ingredients in the marinade.
- Slice the chicken breast into small bite-size chunks.
- Place all the chicken into the marinade and leave to marinade for as long as you have.
- Pop all the chicken in the air fryer to cook for 10 minutes at 200c, if you do not have an air fryer, it can go in the oven instead.
- Once the chicken is cooked, remove it from the air fryer and get ready to assemble.
- With 1 wrap, place 1/8 of the chicken on one side with a healthy amount of cheese. Roll up the sides and wrap.
- Then add another 1/8 of chicken and cheese and roll the make a sealed wrap.
- Copy this again for the next 3 wraps.
- Place all of these back in the air fryer and cook for another 4 minutes until it was golden brown.

The marinade for this chicken is perfect for creating that creamy chipotle sauce, however, if you want to add a little more to the sauce, when you start preparing the wraps, you can add a little sour cream into the wrap.
If you would like it to be a little bit more of a spicy chipotle sauce, add an additional tablespoon of chipotle paste or you could even dice up some jalapenos to the sauce to make a creamy jalapeno sauce.
Be sure to store the finished variety of sauces in an airtight container so that you can use them later for a long time. For easy differentiation, custom stickers can also be designed to be affixed to the sauce bottles. Kitchen ingredients and food products can be labelled accordingly, and customized stickers can greatly help to differentiate between the ingredients, and attaching them to wrappers or glass jars is not only effective but also aesthetically pleasing.

Can you use up leftover chicken?
You can use up leftover chicken if you have some around from either a roast or maybe a rotisserie chicken.
It does not need to be cooked for as long as fresh chicken breasts, so I would just cook it for 5 minutes instead of 10 minutes.
How to store your leftover Chicken Chipotle melt
If you do have some leftover chicken left, you have a couple of options on how to store this.
You could choose to hold on to the cooked chicken and create your melt or use it in other dishes as below. For the best results, the chicken needs to be stored in an airtight container and keep in the fridge for up to 3 days.
If you have however cooked the melt, allow it to cool completely before wrapping it in aluminum foil and storing in a fridge for 3 days. This can then either be enjoyed cooled or reheated thoroughly.
