Delicious Slow Cooker Mexican Chicken Recipe
With the colder days and darker nights well and truly here, we are using our slow cooker more than ever and this easy slow cooker Mexican chicken recipe is going to be the perfect winter warmer with minimal fuss!
There are many different ways to enjoy this chicken, whether you plan to use this recipe to make burrito bowls, add it to a taco salad, chicken enchiladas filling or a tasty addition to your taco night. It is the perfect go-to recipe for those busy weeknight meals where you just want flavour-packed food with minimal effort.
This recipe came about when I had a variety of bits left in the house and wasn’t quite sure what to make on a busy day. Time was limited and I just needed to throw it all in the slow cooker and get on with my day. What a result it was, dinner was prepared and there was enough chicken to enjoy with a wrap the next day for lunch.

What to serve with slow cooker Mexican chicken
There are so many options for what to serve this dish with and we have shared some of our favourite choices below.
- Rice – This is the most obvious option but don’t let that put you off, it is delicious. From plain white rice to Mexican rice or cilantro lime rice, there is plenty to choose from. If you are looking for a lower-calorie option, why not try cauliflower rice?
- Tacos – Whether you prefer corn tortillas, taco shells, lettuce wraps or just plain flour tortillas, make your tacos that make your taste buds come alive.
- Salsa – I love a good salsa and a hot salsa brings this dish alive, however, you could also use your favourite salsa or have pico de Gallo or salsa verde if that would be your preference!
You can also add things such as sour cream, grated cheddar cheese and even a squeeze of lime juice. Another thing I love about Mexican food is the way that beans go from being ordinary to being packed full of flavour. If you have the recipes, why not try this dish with some pinto beans or black beans? Simple ingredients, taken to the next level!
Easy Slow Cooker Mexican Chicken Recipe
Ingredients
- 450g Boneless skinless chicken breasts (Approx 3 chicken breasts)
- 1 Yellow onion diced (you could use red onion if this is what you have in)
- 2 Bell peppers sliced
- 1 Tin of chopped tomatoes
- 1 Tsp Lazy Garlic (or 2 cloves of crushed garlic)
- 1 Tbs Chipotle paste
- 1/2 Tsp Dark brown sugar
- 2 Tbs Fajita/Taco seasoning (I used shop brought but you can make your own if you prefer)
- Seasoning – salt and black pepper
- Side of choice, some suggestions above!
Instructions
- Add all the ingredients to the slow cooker, it may look as though there is not enough liquid in there but it will be perfect!
- Cook on low for 8 hours or high for 4-6 hours.
- When you are ready to serve, take out the chicken breasts and shred using 2 forks.
- Pop the chicken back into the slow cooker and give for a good stir.
- Serve with your favourite side dish.

How do I make my own fajita seasoning?
If you don’t have any fajita or taco seasoning in, you could try to make a blend of your own. This great recipe for fajita seasoning is simple and quick to make, however, it doesn’t feature garlic powder which is common in the pre-packed seasoning.
You could also work on making your own blend, here are a few suggestions for spices and herbs to add:
- Chili powder
- Cumin
- Paprika: Can be sweet, smoked, or hot
- Garlic powder
- Onion powder
- Cayenne pepper
- Oregano
Making your own would allow you to adjust the spice level to suit your own taste.
How to store leftover Mexican chicken
If you have leftover Mexican chicken, it is great to have it as a quick lunch over the next few days or even enjoyed with some rice for the perfect meal on busy weeknights.
Just make sure you allow it to cool completely before transferring it to an airtight container and then store it in the fridge for up to 3 days. Please make sure if you are reheating it, you make sure it is reheated thoroughly and you may wish to add a little extra liquid to make sure it doesn’t dry out.
