Easy Jam Tarts Recipe
Jam tarts are a firm favourite in this house and this easy jam tarts recipe is so simple, that you won’t want to reach for the shop-bought version again!

Jam Tarts Recipe
Ingredients –
- 175g Plain flour
- 1 Tbs Caster sugar
- 85g Cold butter
- 1 Egg beaten
- 1 Tsp Vanilla extract
- Jam (You will need 12 tsp of your jam of choice or a combination of jams)
Instructions –
- In a large bowl rub together the flour and butter until it becomes fine breadcrumbs.
- Mix in the egg yolk and vanilla until it starts to combine. You will need a couple of tablespoons of cold water to help combine, add this in 1 tbs at a time and use a knife to combine.
- Once the dough starts to come together, tip it onto a lightly floured surface and bring it together with your hands. Be careful not to overwork the dough.
- Wrap it in clingfilm and place it in the fridge to chill for 30 minutes.
- Heat your oven to gas mark 6/180c.
- On a lightly floured surface, roll out the dough until it is about the thickness of a pound coin. Using a pastry cutter, stamp out 12 pasty discs.
- Place the discs in a shallow 12-hole cake tin, then spoon 1 tsp of your favourite jam into each tart. Be careful not to overfill as it is easy to put too much in!
- Pop them in the oven and bake for 15 minutes until they are golden brown and the jam is bubbling. They will be very hot so be careful.
- Leave to cool for a few minutes in the tin before transferring to a cooling rack to cool completely.
