I love pancakes but it often feels like a treat when you have them for breakfast, don’t you think? The thought of making pancake batter seems like such an effort but this recipe is going to change your whole perception of that. These oatmeal blueberry pancakes are super simple to make. You can use a blender or food processor to whiz the batter together. Then you just fry them in a little coconut oil or butter, how easy does that sound?

You can make a big batch and then freeze some for a morning when you are in a hurry, make them as an indulgent weekend brunch, or just as a healthy breakfast option that the kids will love. The juicy blueberries add a pop of flavour, and the oatmeal mixture works to hold the pancake shape. You are going to love this easy recipe.

Out of milk? No problem: Milk is a common ingredient in most pancake recipes, but it’s disappointing if you’ve just run out of it or can’t handle dairy. However, when you turn to yoghurt, you won’t need any extra liquid, so you can skip the milk for this recipe. The same goes for these crispy sourdough waffles—no milk needed!

How to make the Blueberry Oatmeal Pancakes

Ingredients

  • 40g Organic Jumbo Oats These pancakes use oats instead of all-purpose flour. I use regular oats. When I grind the batter in the food processor, they don’t quite become oat flour, but close. So if you have a crappy food processor (like me), these will work! If you have a proper one, even better. You can also use ground oats if you wish. 
  • 30g Yoghurt – Yoghurt helps to make these pancakes light and fluffy. The yoghurt works with the baking soda and creates those tiny air bubbles you see when cooking. You can use Greek yoghurt, dairy-free options, or even flavoured natural yoghurt like coconut. 
  • 1 tsp Vanilla – I love adding vanilla to this pancake recipe. The flavour works well with the blueberries.
  • 1/4 tsp Ground cinnamon – if you’re a cinnamon fan, absolutely add it. If not, these will be just as delicious without it. It adds a touch of warmth to the whole recipe.
  • 1/4 tsp Baking soda and baking powder – Using a combination of both baking soda and baking powder helps to create a light and fluffy texture. 
  • 1 Egg – The egg along with the other wet ingredients is used as a binding agent for this simple pancake recipe. 
  • 55g Blueberries – I have used fresh blueberries for this recipe but you can use frozen. More on those options and other variations later in this post.  
  • 1 tbs Maple syrup or honey – Either one of these will help to sweeten the pancake batter. 
  • Cooking spray or coconut oil – This is for frying the pancakes. 

Instructions

Step 1

First up, let’s make the pancake batter. Just add all of the wet and dry ingredients except the blueberries to a blender or food processor and then blend until almost smooth. If your food processor is great, you’re going to get a very smooth batter. If not (mine isn’t!), the oats will still be coarse, which is not a problem. Either way works great!

Step 2 

Get your frying pan and then melt a little coconut oil on a medium heat. Pour a ladle of pancake mixture into the frying pan. You are looking to make smaller pancakes but you could make one large one if you wish. I usually make 5 pancakes with this amount of batter. That way, I get one cute little pancake tower for one that is just enough to make you full, but not stuffed.  Add fresh blueberries to the uncooked pancake side.

Step 3

Let the pancakes cook and once you notice the edges are becoming golden brown and bubbles start to form you can flip them over.

Step 4

Serve them as soon as possible and add your chosen toppings. I like to add a few extra blueberries and a drizzle of maple syrup or honey. Yum!

Tips for the best results

While this may sound like a simple recipe to follow it is always a good idea to be aware of some extra hints and tips to give you the best results. 

  • The vanilla extract will help to give a touch of sweetness to the pancake recipe. 
  • I have used rolled oats for this recipe but you could also use quick cooking oats. Any old-fashioned oats will work as you are using the blender to blitz the ingredients together. I would avoid steel-cut oats.
  • Make some extra pancakes and freeze them for a busy morning when you want something sweet and delicious but are short on time.

What to serve with blueberry oatmeal pancakes 

  • You could serve these pancakes with some whipped cream for a more indulgent breakfast. Top with a drizzle of blueberry sauce.
  • Drizzle the pancakes with pure maple syrup or honey for some extra sweetness. 
  • Serve with a scoop of vanilla ice cream and turn these delicious pancakes into a tasty dessert. 
  • Squirt over some lemon juice and top with fresh fruit for a different flavour that is light and refreshing.

Variations

Make sheet pan pancakes: Add all the pancake mix to a baking sheet and bake in the oven. You can then cut it into portions. 

Use different berries: If you want you could use raspberries or strawberries as an alternative to blueberries. Or do a mix of berries instead. 

Frozen blueberries: For ease, you could use frozen blueberries. You may find that the color of the berries seep into the pancake mixture more than it would with fresh blueberries but the flavor will still be the same. Frozen blueberries are perfect to use in 

Rolled oats: I used rolled oats but if you want to use ground oats then you won’t need a blender as you can just mix the ingredients together in a large bowl. 

Ever heard of Kaiserschmarrn? It’s basically a shredded pancake, but taking the extra time to toast the pancake pieces gives the meal a delightful twist. You can easily use this batter to create it!
