The sun is shining and the weather looks like Summer may finally be here, we have the perfect recipe for you to enjoy as the warm weather continues with this delicious red pepper hummus recipe.

When it comes to healthy snacks, homemade hummus is a classic choice that never disappoints. Now I am not a fan of normal hummus however this version of red pepper hummus is so nice, that I have to be careful not to eat it all in one go! Whether you are choosing to have it with a salad, in a wrap with some homemade falafel or even just with warm pitta to dip into it, it makes the perfect treat in the summer and one that you will find yourself coming back to time and time again.

With just 6 ingredients, it takes a matter of minutes to make, so it is not only tasty, it is minimal effort too.

Delicious Red Pepper Hummus Recipe

Red Pepper Hummus Recipe

Ingredients –

  • 400g Canned chickpeas
  • 2 Roasted red peppers, I use these as I want to save time but you could roast your own if you would prefer
  • 1 Tbs lemon juice
  • 2 Tbs olive oil
  • 1/2 Tsp chopped chilli (I use Lazy chilli)
  • 2 Tbs Tahini

Instructions –

  • In a hand blender, combine the tahini, olive oil and lemon until a smooth paste.
  • Add in the rest of the ingredients and blend until smooth. You may find it needs a few pulses to get the correct creamy consistency.
  • Season to taste and enjoy.

You can make this recipe without a hand blender by using either a fork or a masher, however, you will get a slightly lumper consistency in the end.

Can you roast your own peppers?

Of course, if you would prefer to roast your own red peppers, then that works just as well. Use 2 red bell peppers and roast either in the oven/grill or even over the BBQ at this time of the year.

When you are roasting these red peppers, simply deseed them and pop them on a baking sheet in a hot oven and you are looking for a blackened skin, this is why popping them under a grill works great as it roasts the outside of the pepper giving it that bold smoky flavour.

Just allow them to cool and use them as you do above.
