Ingredients:
- 1 Pack of chilled puff pastry – bring it to room temperature first
- 3 Tbs Caster sugar
- 2 Tbs Cinnamon
- 1 Egg (beaten)
- 3 Tbs Icing Sugar
Step-by-Step Method:
- Preheat the oven to 200C/180C fan/gas 6.
- Roll out your puff pastry. I leave it on the parchment it comes in to make it easier to roll later.
- In a bowl, mix your caster sugar and cinnamon.
- Spread the sugar mixture evenly all over the pastry apart from a 1cm border along 1 of the shorter ends of the pastry.
- Roll from the shorter end without the border to the other end, keeping it as tight as you can. Once you reach the end with no sugar, brush with the beaten egg to help seal tightly on the final roll.
- Cut into 8 even slices and lay them flat on a lined baking tray, brush them all with the beaten egg to glaze.
- Place this in the oven for 15 minutes to bake.
- Leave to cool on the baking tray.
- In another bowl, mix the icing sugar with a little cold water to get a nice thick consistency.
