Quick and easy chocolate chip shortbread biscuits

Shortbread biscuits have to be up there in the top tier of biscuits, whenever you open a box, they never seem to last long. Now add chocolate into them and they pretty much do not get much better.

We have tried this recipe out a few times and each time they have come out just as good, what is even better is the fact that they only need 5 ingredients and take about 10 minutes to make before a simple slow bake in the oven!

Lots of recipes will call for slowly adding ingredients or sifting flour etc, I am not going to lie, I just do not have time to be faffing around with that. It pretty much all goes in the mixer whilst I clear some space to start making the biscuits.

In this recipe I used milk chocolate chips, however, you could switch these out for white chocolate or dark chocolate chips depending on what your taste preference is.

Quick and easy chocolate shortbread biscuits recipe

Ingredients

  • 200g Plain flour
  • 125g Butter
  • 60g Caster sugar
  • 100g Milk chocolate chips
  • 1 tsp Vanilla extract

Instructions

  • Preheat the oven to gas mark 2 or 150c.
  • Line 2 baking sheets with baking paper.
  • Cream together the butter, sugar and vanilla extract.
  • Mix in the flour until combined
  • Mix in the chocolate chips until evenly combined
  • Bring the dough together with your hand in the bowl until it is combined into a ball and then turn out onto a floured surface
  • Gently roll out the dough until it is about 5-8mm thick
  • Cut out your biscuits using a cookie cutter (I used a star cutter but you can use what you like)
  • Place your biscuits on the trays and pop them in the oven for 30 minutes (if your oven does not cook evenly, you may wish to rotate the trays halfway through)
  • Take your biscuits out of the oven and allow them to cool on the tray before transferring to a cooling rack
  • Enjoy!

One key thing with this recipe is to not overcook your biscuits, they do not need to come out of the oven golden, so they will look a little on the pale side when they come out.

What equipment do I need to make these?

There is no need for any fancy equipment for this but I personally made these in the mixer, just as it was quicker and easier. Here is a full list of things you will need to recreate these biscuits:

What is shortbread?

Shortbread is a biscuit which is crumbly in texture and sweet and buttery in taste.

Its consistency is what gives it the name, the mixture is short and crumbly.

Can you freeze shortbread dough?

Yes, you can, if you find yourself running out of time, you can make this dough in advance and freeze it. You then just need to make sure that you allow time for it to defrost fully before you cook this.

How long do these shortbread biscuits keep?

One of the great things about shortbread biscuits is the fact that they keep so well. Pop them in an airtight container, away from heat and sunlight and they will keep for up to 4 weeks.

Now, if they make it past 4 days in this house I will be impressed!

Can you substitute the chocolate in this recipe?

Of course, you can, you can use this recipe as your base and then just switch out the chocolate chips for a flavouring of your choice. It would be wise to avoid wet ingredients such as fresh fruit etc as this will impact the texture, however, everything else is fine.

If you are wondering what you can add in, here are some suggestions to get you started.

  • Nuts – Just make sure these are finely chopped.
  • Other sweets – things such as Smarties, M&M’s etc.
  • Citrus – Things such as orange and lemon make a great addition to this and finely grated zest is the perfect addition.

Does it matter what shape I make my chocolate shortbread?

Absolutely not!

I just chose to use the star cutter as that was all that I could find. However, if you have a traditional circle cutter then go for that. If you do not have any cutters, you can go for the traditional finger biscuits.

  1. I love shortbread and most things buttery but I never choose to make them. I seem to always choose cake over biscuits when I bake. But these are a real tease and it looks super simple to make so there’s no stopping me now
