7 Lunch ideas for on the go
Life on the go can be busy and trying to sort out food for a busy day at school or work can sometimes feel a bit like Groundhog Day. I don’t know about you but we always seem to stick to the usual, sandwich, crisps and yoghurt but it can get a little bit boring!
So we have compiled a list of lunch ideas, without a sandwich in sight. These lunches combine an option of cold, pre-heated or heat on the go, so there is sure to be something for everyone.
If you are looking for meals on the go warm, I would recommend these food flasks from Thermos. They keep your food warm all day and are compact which makes them ideal for travelling.
CRIMPiT –
Now if you are a regular on the blog, you will know that we brought a CRIMPiT machine before Christmas and we loved it ever since! You can choose between hot or cold fillings and toast, oven cooking or an air fryer to finish them off.
My personal favourite filling is beef, horseradish, onion and cheese. Simply make them up and pop them in the toaster, delicious! If you are looking for some filing inspiration, check out this blog post here.
Soup –
I know this one may seem a little boring, however, I love using up leftover vegetables in our soup maker to create lunch for a few days.
We have had a Morphy Richards soup maker for a few years now and it never lets us down. I tend to stick to the vegetable soup as they are just easier, however, there is pretty much no limit to the soup creations you can make. These always travel well in the Thermos flask and are warm at lunch even after heating first thing in the morning.
Here are just a few options for soups to make:
- Leek and potato
- Roasted pepper and tomatoes
- Butternut squash
- Roast chicken
- Ham and pea
Ploughman’s lunch –
Picky lunches are great for lunch on the go and you just can not beat a ploughman’s lunch. With a wide range of lunch boxes and pots on the market, you can prepare all your lunch before you go without it being in a mix when you get to work or school.
The best thing about ploughman’s style lunch is you are able to create whatever style you want and it will be perfect for lunch wherever you may be. If you are after a little inspiration as to what to add to your ploughman, here are some of my favourite choices.
- Ham
- Cheese
- Pickled onions
- Pickled gherkins
- Eggs
- Bread (this could be in the form of breadsticks or crackers)
- Salad
Pitta and tzatziki –
I love tzatziki and you can not beat it with fingers of pitta bread dipped in or maybe some vegetable sticks.
Whether you make your own tzatziki or buy shop brought alternative, this is a great lunch on the go and is usually better tasting when the sun is out!
If you have the option to heat your pitta’s up, then this is great, however, they can just be eaten cold.
Pasta –
Pasta is one of my go-to dishes, I love it hot and cold and it makes a great lunch option. If you are having it cold, I would recommend it with tuna, sweetcorn and mayonnaise, with a little red onion through it.
There are a whole host of pasta sauces you can make with things such as tomato, vegetables or cheese sauce.
One thing I have learnt is that pasta in the Thermos does not work, it gets too soft and is not a nice texture. So if you are looking for pasta warm for lunch, you will need to have access to a microwave.
Frittatas –
There are a number of options for frittata fillings and you can eat these on their own, with sauce or with a salad for the perfect lunch on the go. If you batch-cook these in a small muffin tin and allow them to cool, they will keep safely in the fridge for a couple of days.
My favourite is courgette frittatas as I think they are fresh and give me that summer feeling.
Couscous salad –
Couscous is very versatile and can create the perfect lunch.
Don’t be put off by thinking it is very bland if you cook it through with vegetable stock and then add in some salad to give you a great base to start your lunch.
We always combine our couscous with cucumber, red onion, peppers and tomatoes as our start and then add from there things such as ham, cheese or tuna depending on what we fancy. You can add anything that you like to this dish though and is a great way to use up things like leftover chicken etc.
These are just some suggestions for lunches on the go, however, don’t rule out tasty leftovers reheated or cold as they are just as delicious.
