Is there anything better than delicious brownies? Well if you are thinking no, then you have not tried these delicious toffee brownies that will come up and give you a great big sugary kiss with every bite!

There is just something about brownies that gives of that warming comfort food. I love to eat my brownies warm with a scoop of vanilla ice cream and even if you don’t eat them warm from the oven, a few seconds in the microwave is enough to warm them through and make them the perfect pudding.

This brownies recipe does include nuts however if you are unable to eat nuts you can simply switch these out for some more chocolate chunks or maybe even some other fruit such as cherries. When you read the recipe, it may sound like a lot of effort with the toffee middle but trust me, it is divine when you eat it and worth the time.

Anyway, let’s get back to the recipe for these yummy toffee brownies!

Delicious toffee brownies recipe

Prep time – 20 Minutes

Cook time – 45 Minutes

Wait time – 1 Hour

Ingredients

  • 100g Dark chocolate broken into pieces plus extra to decorate with
  • 175g Unsalted butter
  • 350g Caster sugar
  • 4 Eggs
  • 2 tsp Vanilla extract
  • 200g Plain flour
  • 1 tsp Baking powder
  • 100g Pecans, roughly chopped
  • 200g Toffees (I used supermarket own brand)
  • 75ml Double cream

Instructions

  • Preheat your oven to 180c or gas mark 4 and line a shallow 11 by 7 inch baking tin.
  • Place the chocolate in a large heatproof bowl with the butter and place of over a pan of simmering water. Stir occasionally until the chocolate has melted and the butter is well combined.
  • Remove this bowl from the heat and then stir in the sugar to this mixture.
  • Lightly beat the eggs with the vanilla in another bowl and then stir them into the chocolate mixture. Sift the flour and baking powder into this mixture and gently fold together. Then fold in the pecan pieces
  • Place the toffees and cream into a pan and gently heat, stirring continuously until it has all melted.
  • Transfer half of the chocolate mixture to the baking tin, then spoon over half the toffee and top with the remainder of the chocolate mixture.
  • Place into the oven and bake for 40-45 minutes until it is firm to touch.
  • Remove from the oven and leave to cool in the tin for 20 minutes, then turn out and remove the baking paper. Leave to cool completely on a wire rack.
  • Decorate the top by reheating the toffee sauce and drizzling over the top with melted chocolate.

If you think they will last that long, these toffee brownies will last up to 5 days in an airtight container.

As I mentioned in the recipe, there is no need to spend a fortune on toffees, I use these Tesco own brand ones to make our brownies and they are delicious.

Can you freeze brownies?

Brownies freeze perfectly well but just make sure you put baking paper in between each one to ensure they don’t stick to each other when you freeze them. Once separated, pop them into an airtight container in the freezer.

What to have with your brownies

If you are having your brownies a few days later, you might be looking for a side to have with them. I always find sometimes as delicious as these toffee brownies can be, it may be a little too stodgy after a big meal. Serving these alongside some ice cream or cream is the perfect way to eat these when they are a little warmer.
