Festive Gingerbread And White Chocolate Cookies

I love this time of year as it is the perfect weather for comfort food and baking and these gingerbread and white chocolate cookies are the perfect winter warmer snack.

If you are a regular reader of the site, you will know we love a good cookie recipe and this one is up there competing with the cranberry & white chocolate cookies we created a few years ago.

With just the right amount of spice, these cookies bring the warming comfort of gingerbread flavour combined with the sweet white chocolate to balance out the flavour and are the perfect post-school/work treat with a warming hot chocolate or cup of tea!

Now you may prefer making your own gingerbread men or even gingerbread house, but these soft cookies are perfect if you are not looking for that crunchy bake and if I do say so myself, they are the best ginger cookies with the best results every time! The warm spices in this gingerbread recipe are mild, with a little bit of nutmeg and cinnamon bringing a little kick to the bake, perfect winter spices.

You may think that making your own cookies can be time-consuming and a faff but trust me it is not and you are not going to go back to shop-bought cookies after making your own.

Gingerbread And White Chocolate Cookies Recipe

Prep time – 10 Minutes

Cook time – 14 Minutes

Wait time – 30 Minutes

Ingredients

  • 125g Unsalted butter (room temperature)
  • 100g Light Brown Sugar
  • 125g Caster Sugar
  • 1 egg
  • 225g Self Raising Flour
  • 200g White Chocolate Chips
  • 1 Tsp Ground Ginger
  • 1/2 Tsp Ground cinnamon
  • 1/2 Tsp Ground Nutmeg
  • Pinch of Salt

Instructions

  • Preheat the oven to gas mark 4 (180c).
  • Cream together the butter and sugar until well mixed on medium speed.
  • Add the egg & spices and mix until combined.
  • Sift in the flour, add the salt & chocolate chips, then combine well.
  • Roll into 12 evenly sized balls.
  • Place onto 2 lined baking sheets (6 cookies per baking sheet).
  • Bake for 12-14 minutes until just golden around the edges (these will come out soft to the touch but will firm up when cooled).
  • Leave to cool on the baking tray for 5 minutes, then transfer to a wire rack to cool, then serve and enjoy!

How to Make Perfectly Round Cookies

If you have ever wondered how other people’s cookies always look perfectly shaped and yours come out a little unusual, don’t fear, I am about to share the hack on how to make perfectly round cookies.

Now, no one’s cookies come out the perfect shape, they all just relax in the oven when they are baking.

However, when they come out of the oven, whilst they are still warm and on the baking sheet, gently use a cookie cutter or a glass to make circular movements around the cookies. This just helps you smooth out the shape a little whilst they are firming up as they cool.

Gingerbread & White Chocolate Cookies

Equipment needed

These white chocolate gingerbread cookies can be made with minimal equipment, which makes them perfect for any household. Of course, if you have some things such as an electric mixer, it can save you some effort but it can still be made without them.

You will need:

  • Large bowl
  • Whisk (or if you have one a hand mixer or stand mixer with a paddle attachment)
  • Wooden spoon
  • 2 Baking sheets
  • Rubber spatula
  • Wire cooling rack
  • Parchment paper (or you could use silicon mats if you have these)
  • Measuring scales
  • Measuring spoons

When I am rolling these cookies, I just divide the mixture into 12 equal cookie dough balls which are usually about 1-inch balls however you could use a cookie scoop or an ice cream scoop if you don’t want to do it by eye.

How to store your cookies

If you have leftover cookies, they are best stored in an airtight container for up to 4 days. If you are planning to take one for lunch on the go, simply wrap it in plastic wrap and it will be perfect on the go.

These chewy cookies are perfect for the holiday season, whether you are looking for the perfect cookies for a Christmas cookie exchange or looking to make some baked cookies for Christmas gifts for loved ones. If this is your first time making cookies, don’t panic if they look a little pale, once they start to firm up at the edges and crack on the top, they will firm up when cooling.
