If you love a homemade fakeaway but don’t want to spend ages making it, this Ninja Soup Maker Katsu Curry is such an easy family dinner.

The best part for me is the sauce. Everything goes straight into the soup maker; I select the Smooth Soup programme and leave the Ninja to do the hard work. There’s no need to cook the sauce separately on the hob or blend it afterwards.

While the katsu curry sauce is cooking, you can get on with preparing the crispy panko chicken and rice, so everything comes together nicely for dinner.

We made ours with oven-baked chicken and served it over rice before pouring plenty of the smooth curry sauce over the top. The recipe made three very generous portions for us, but it would comfortably serve four.

Making Katsu Curry Sauce in a Ninja Soup Maker

I think this is what makes the recipe particularly useful.

When you make katsu curry sauce traditionally, there can be quite a few stages involved. Using the Ninja Soup Maker makes the process much more hands-off.

For this recipe, I simply put all of the sauce ingredients straight into the soup maker and selected Smooth Soup.

I didn’t sauté the onion or carrot beforehand, and there was no need to blend the sauce separately at the end. The programme took care of the cooking and blending and produced a lovely smooth sauce ready to pour over the chicken.

Soup maker functions can vary between models, so it’s always worth checking the instructions for your particular machine before starting.

Getting the Panko Chicken Crispy in the Oven

For the chicken, I used panko breadcrumbs rather than ordinary breadcrumbs. They give the outside a much crunchier texture, which is perfect with the smooth katsu sauce.

Our chicken was cooked in a 190°C fan oven for around 15–18 minutes. The exact time will depend on how thickly you cut your chicken, so always make sure it is completely cooked through before serving.

One tip is not to make the chicken pieces too different in size. Keeping them fairly even helps them cook at roughly the same rate.

And don’t worry if every piece isn’t perfectly shaped. This is an easy family fakeaway, not a restaurant kitchen!

Is This Katsu Curry Spicy?

I used medium curry powder and found that gave the sauce plenty of flavour without making it particularly hot.

If you’re cooking for younger children or anyone who doesn’t enjoy much spice, you could use a mild curry powder instead.

Likewise, if your family likes their curry with more of a kick, you can adjust it to suit your tastes.

What to Serve With Chicken Katsu Curry

We kept ours simple and served the crispy chicken with rice and plenty of the homemade katsu curry sauce.

That combination works really well because you get the crunchy panko coating against the smooth sauce.

You could also serve it with some vegetables on the side. Broccoli, green beans, peas or stir-fried vegetables would all work if you want to add some extra veg to the meal.

Can You Make the Katsu Curry Sauce Ahead of Time?

Yes. If you want to make dinner even quicker later, you can prepare the sauce ahead of time and store it in the fridge once it has cooled.

Reheat it thoroughly before serving.

You could also make the sauce without making the chicken at all. It would work with vegetables or another protein, making the Ninja Soup Maker katsu curry sauce a useful recipe to have on its own.

Can You Reheat Leftover Katsu Curry?

If you have leftovers, I’d store the chicken and curry sauce separately where possible. This helps stop the panko coating from becoming soggy in the sauce.

Allow leftovers to cool before refrigerating them in suitable airtight containers and use them within a couple of days.

Reheat the sauce until piping hot throughout. The chicken is best reheated separately in the oven so the coating has a chance to crisp up again.

As with any cooked chicken, only reheat it once and make sure it is thoroughly heated before eating.

Can I Make a Vegetarian Katsu Curry?

The curry sauce itself is easy to make meat-free as long as you use vegetable stock, which is what I used in this recipe.

Instead of the chicken, you could serve the sauce with crispy breaded vegetables or your preferred vegetarian alternative.

That also makes the sauce handy if you have different dietary preferences within the family – everyone can have the same rice and curry sauce with a different topping.

An Easy Homemade Fakeaway

This Ninja Soup Maker Katsu Curry is definitely one to add to our fakeaway rotation.

Being able to put the sauce ingredients into the soup maker, press Smooth Soup and leave it cooking makes the whole meal feel much easier than making every element from scratch on the hob.

The combination of crispy panko chicken, rice and that smooth curry sauce went down really well here, and I particularly like that most of the sauce-making happens without me having to do anything.

If you already have a Ninja Soup Maker sitting in the kitchen, this is a nice way to use it for something other than a traditional bowl of soup!

For the sauce

Instructions

  1. Add all the sauce ingredients into your Ninja Soup maker.
  2. Pop on the lid and select smooth soup setting and start.
  3. Pre-heat the oven to 190°C Fan (210°C or gas mark 6)
  4. Whilst this is cooking, coat your chicken in flour, then egg and then breadcrumbs.
  5. Place on a single layer of a baking tray.
  6. Pop the chicken in the oven for 15-18 minutes turning half way through.
  7. Serve the chicken with your delicious katsu sauce and rice of your choice.
